Aging is closely related to the content of ethylene, gibberellin or other hormones in vegetables, changes in storage, growth and development conditions of vegetables, and storage conditions. To delay the aging of vegetables and prolong the storage period, firstly, choose healthy and well-growing vegetables for storage; secondly, strictly control the content of ethylene and other hormones during storage to help delay the aging of vegetables; third, create optimal storage. The key link in the post-harvest preservation of vegetables, along with the development of vegetable exports, the pre-cooling of vegetable production areas has received increasing attention. The role of pre-cooling is to quickly remove field heat, effectively reduce the metabolism level of vegetables, reduce nutrient consumption, delay aging, and prolong the shelf life of vegetables. At high temperatures, prolonging the time of pre-cooling from harvesting will promote vegetable aging and greatly shorten the shelf life of vegetables. Low temperature can effectively inhibit the growth and activity of rot pathogens, reduce losses, and is also a key factor in the storage of vegetables. After the vegetables are pre-cooled in the production area, they are transported into the circulation by refrigerated containers. After entering the land, they enter the revolving cold storage or sell the freezer, which can maximize the quality of the vegetables and reduce the circulation loss. Since various vegetables react differently to temperature, determining the storage temperature of vegetables must be based on the adaptability of the vegetables themselves to low temperatures.


During the storage process of vegetables, the dynamic balance of the synthesis-hydrolysis of various substances is constantly changing. The synthesis process of most vegetables is gradually weakened during storage, the hydrolysis process is continuously strengthened, and simple hydrolyzed products are accumulated, which stimulates respiration and is beneficial to microbial infestation. The conversion of the pectin material reduces the mechanical resistance of the vegetable. The change in the color of vegetables is often a sign of post-aging aging. At the same time, vitamin C in vegetables gradually decreases at different speeds during storage. Therefore, delaying the conversion and consumption of vegetable nutrients is one of the keys to maintaining the quality of vegetables. Commercially, it can be satisfied by reducing the respiration, inhibiting post-ripening and aging, creating optimal storage conditions and gas composition result.
